Chef Cal: Tiny Foods Class

Serving delicious food in little mini-servings

When hosting, it's important to make your guests feel comfortable and at home. Serving tiny foods can help create that welcoming atmosphere. Chef Cal will discuss the tools and supplies needed to create Tiny Food recipes at home. Some of the Tiny Food recipes he will discuss include:

  • Italian Sausage Bundles served in mini Won Ton cups 
  • Mini Honey Fruit Compote Cups
  • Mini Bacon, Lettuce and Tomato Sandwiches
  • Red Pepper Soup with Sambuca Cream served in shot glasses
  • Salad served in Mini take-out Containers
  • Stir-fried Thai Shrimp served on Endive spears
  • Mini Bagel Bites with Cream Cheese, Tomato and Basil
  • Mini servings of Honey Flavored Ricotta Cheese with Diced Beets
  • Chocolate Fantasy – a simple but delicious dessert Tiny Dessert
  • Cherry Macaroon Parfaits

About Chef Cal Kraft

For thirty years, Chef Cal Kraft worked in the corporate world of the travel and hospitality industry, from flying the friendly skies, to Director of Customer Relations at Amtrak, to Regional Vice President for the Council of Better Business Bureaus. He retired in 1995 to pursue his interest in both cooking and running a country inn. For several years Cal was an Innkeeper at the Bailiwick Inn, a historic 14 - room inn in the heart of Fairfax, Virginia. It was here that he developed his true love of cooking and fine dining. Whenever he was not attending to his inn keeping duties, he was in the kitchen watching as Executive Chef Jeff Prather created his culinary magic night after night. The Inn was sold in late 1999. Cal studied Northern Italian Cuisine under Chef Instructor Jane Woods as well as taking culinary studies at both L’ Academe de Cuisine and the Culinary Institute of America.  His books:include • The Ramblings of an Old Man Book 2   • Recipes from the Chef’s Corner • The Ramblings of an Old Man.
